To celebrate being recognised as one of the top 50 in #Asias50BestBars, Stockton has a little something up our sleeves. Wednesday 23rd is no ordinary night. For one night only Charlie Ainsbury will be in town, displaying his skills at our very own Stockton.
It all started in 2007 for Charlie, where he won a bartending competition run by an Industry Magazine. Seven years later he was crowned the national winner of the world’s largest and more prestigious bartending competition – World Class – where he was required to create a cocktail that complemented an intricate dish created by Darren Robertson. His journey of discovery, learning new techniques and practices has led him to join forces with Luke Ashton and open their own bar in Sydney - ‘This Must Be The Place’. Here they break away from the basement speakeasy theme frequented in Sydney, instead offering a light, airy Nordic feel. The cocktails they create take on the same vibe – although still inspired, they eliminate the showry tricks and gimmicks. What’s more, the bar works consciously to reduce its environmental impact – reusing items to reduce waste, making their own syrups, using only fresh, cold-pressed juices and recycling mineral water bottles used to carbonate their drinks.
